Description

  1. Process Overview
    1. First step: Cocoa nibs are liquified into a pumpable mass. Grinding opens up the cocoa cell structure and releases cocoa butter, creating a dispersion of solid particles in the butter.
    2. Second step: Cocoa solids are ground to the required fineness.
